Despite being called for its use in papal gardens, Romaine lettuce has been around since the third millennium BC, when it was portrayed in bas-reliefs by the ancient Egyptians. Romaine’s other name, “Cos,” reflects another aspect of its past on the Greek island of Kos. Since they utilized lettuce as a spoon in their traditional cooking, Syrian gardeners later started carefully breeding this variety of lettuce to have strong ribs and a spoon-like shape.
